Mini Mocha Creamwiches

Forget about chasing down the ice cream truck-these little sandwiches are the perfect size for satisfying your sweet tooth. And they’re great to make in advance and have on hand whenever you need a cold treat!

  • 1/2 t instant coffee granules

  • 1/4 c Stonyfield Organic Fat Free Milk

  • 1 1/2 c Stonyfield Organic Gotta Have Java Nonfat Frozen Yogurt

  • 1/4 c chocolate-covered espresso beans (chopped)

  • 24 chocolate wafer cookies

Step 1

Dissolve coffee granules in milk in small bowl; let stand 1 minute.

Step 2

Soften frozen yogurt at room temperature for 5 to 10 minutes if necessary. Stir together frozen yogurt, milk mixture and chopped coffee beans. Freeze for 20 to 25 minutes or until slightly firm.

Step 3

Working quickly, scoop about 2 heaping tablespoons of frozen yogurt mixture onto middle of flat side of cookie. Top with another cookie, flat side down. Wrap sandwich tightly in plastic wrap. Return frozen yogurt to freezer for 10 minutes if it becomes too melted to work with.

Step 4

Repeat with remaining cookies and frozen yogurt mixture to make 11 more sandwiches.

Step 5

Place in freezer for at least 3 hours or overnight.
