Ingredients

14colive or canola oil
2tbsplemon juice
2tbsphoney
14tspof salt
1 12cStonyfield Organic Fat Free Vanilla Yogurt
10 medium carrots (shredded)
12cdried cranberries
1 small red onion (chopped)
12cchopped almonds

Directions

  1. In a small bowl, combine oil, lemon juice, honey, salt, and yogurt.

  2. Whisk until well blended.

  3. In medium size mixing bowl, toss carrots, cranberries, red onion, and almonds.

  4. Pour yogurt mixture over carrots and toss.

  5. Place salad into a serving bowl and serve.
