Ready In: 45 minutes Level: Easy Prep: 10 minutes Cook: 35 minutes Yields: 6 servings Print RecipeIngredients2 Tbsp olive oil1 yellow onion, diced1 C Stonyfield Organic Whole Milk Greek Plain Yogurt, room temperature + more for garnish3 cloves garlic, chopped fine, grated or pressed2 tsp ground cumin2 tsp dried oregano2 tsp chili powder1/2 tsp salt1/2 tsp black pepper3 (15-ounce cans) black beans, drained and rinsed (save some for garnish)3+3/4 C low sodium vegetable broth or chicken broth For Garnish: chopped cilantro leaves. Lime juice or wedges, crumbled tortilla chips or tortilla stripsdirectionsStep 1 Heat the oil in a large soup pot over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic, cumin, oregano, chili powder, salt, black pepper, and cook stirring for 1 minute.Step 2 Stir in the beans, broth, and bring to a boil. Reduce heat to medium-low and cook covered for 10 minutes.Step 3 Uncover and crush the beans with a potato masher or use an immersion blender and purée until chunky (or remove a portion of the soup and purée in a blender). Continue to cook uncovered for 10 minutes, stirring occasionally.Step 4 Remove the pot from the heat and allow to cool for 5 minutes. To prevent the yogurt from separating, put the yogurt in a bowl and gradually stir in some of the warm soup. Stir the warm yogurt into the pot of soup. Add lime juice and stir.
