Southwestern Black Bean Soup

    Ingredients

  • 2 Tbsp olive oil
  • 1 yellow onion, diced
  • 1 C Stonyfield Organic Whole Milk Greek Plain Yogurt, room temperature + more for garnish
  • 3 cloves garlic, chopped fine, grated or pressed
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 2 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 (15-ounce cans) black beans, drained and rinsed (save some for garnish)
  • 3+3/4 C low sodium vegetable broth or chicken broth
  • For Garnish: chopped cilantro leaves. Lime juice or wedges, crumbled tortilla chips or tortilla strips

Step 1

Heat the oil in a large soup pot over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic, cumin, oregano, chili powder, salt, black pepper, and cook stirring for 1 minute.

Step 2

Stir in the beans, broth, and bring to a boil. Reduce heat to medium-low and cook covered for 10 minutes.

Step 3

Uncover and crush the beans with a potato masher or use an immersion blender and purée until chunky (or remove a portion of the soup and purée in a blender). Continue to cook uncovered for 10 minutes, stirring occasionally.

Step 4

Remove the pot from the heat and allow to cool for 5 minutes. To prevent the yogurt from separating, put the yogurt in a bowl and gradually stir in some of the warm soup. Stir the warm yogurt into the pot of soup. Add lime juice and stir. Ladle into bowls and garnish with cilantro, a lime wedge, more yogurt and tortilla chips, if desired.
