Yields: 2 Cups
3 cloves garlic
1 chipotle pepper in adobo sauce
4 T olive oil
1 c Stonyfield Organic Greek Plain Nonfat Yogurt
2 t hot pepper sauce (or to taste)
1 t cumin
1 1/2 c frozen shelled edamame (green soybeans, thawed)
Salt and pepper to taste
Place garlic cloves, chipotle pepper, olive oil, yogurt, hot sauce, and cumin into a blender or food processor.
Purée until smooth, then add the edamame, and continue to purée until smooth.
Season to taste with salt and pepper before serving.
