|1⁄2||medium cucumber (peeled, seeded and cut into matchsticks)|
|Salt to taste|
|2||tsp||fresh mint (chopped)|
|1||c||Stonyfield Organic Low Fat Plain Yogurt|
In small bowl combine yogurt, mint, cucumber, ginger and salt.
Fold ingredients together, cover and refrigerator for 1 hour before serving.
