Cucumber Raita
A cool and refreshing dip, perfect for all of those homegrown cucumbers. Serve as a dip with spicy, grilled chicken.

Ingredients
| 1⁄2 | medium cucumber (peeled, seeded and cut into matchsticks) | |
| Salt to taste | ||
| 2 | tsp | fresh mint (chopped) |
| 1⁄4 | tsp | ginger |
| 1 | c | Stonyfield Organic Low Fat Plain Yogurt |
Directions
In small bowl combine yogurt, mint, cucumber, ginger and salt.
Fold ingredients together, cover and refrigerator for 1 hour before serving.
