Greek Yogurt Banana Bread

The Greek yogurt in this banana bread makes it a very dense and moist texture which holds up nicely when adding walnuts. The cinnamon gives it a little spicy kick that you'll love.

  • 3/4 c Stonyfield Greek Plain Yogurt (or 5.3oz container)
  • 3/4 c sugar
  • 1/3 c light brown sugar (packed)
  • 2 eggs
  • 1 t vanilla
  • 2 c flour
  • 3/4 t salt
  • 3/4 t cinnamon
  • 3/4 t baking soda
  • 4 small or 3 large over-ripe bananas (mashed)
  • 1 c walnuts (optional)

    Step 1

    Preheat oven to 350°.

    Step 2

    Stir yogurt and sugar together and then lightly beat in eggs and vanilla.

    Step 3

    In a separate bowl, combine flour, salt, cinnamon and baking soda.

    Step 4

    Now mix everything with the banana mash. Optionally add nuts at this time.

    Step 5

    Pour mixture into a greased and floured 9x5 inch loaf pan.

    Step 6

    Bake at 350° for one hour or until toothpick inserted in center comes out clean. Makes one loaf.
