Tzatziki is cool, refreshing and easy to prepare. It can be served as a dip or a topping on your favorite meats, fish or on sandwiches. Try it over falafel.

Ingredients

1ptStonyfield Organic Low Fat Plain Greek Yogurt
1 cucumber (peeled, seeded, and grated)
1clovegarlic (minced)
  Salt and pepper to taste
1tbspfresh parsley (chopped)
1tbspfresh mint (chopped)
1tbspfresh lemon juice

Directions

  1. Combine ingredients in a bowl and fold together, refrigerate for 2 hours before serving.

  2. Makes about 2 cups.

Don't worry too much about getting the cucumber really small or properly grated, everything melds wonderfully when you're done. If you like your tzatziki a bit thinner, a teaspoon or so more lemon juice will do the trick without being too strong.
