Irish Soda Bread

A traditional hearty Irish bread made lighter and more moist with yogurt.

Yields: 1 Loaf

Ingredients

  • 3 c all-purpose flour
  • 1 c whole wheat flour
  • 1/2 c sugar
  • 2 t baking soda
  • 1 t salt
  • 4 T butter
  • 1 c dried currants
  • 1 1/2 c Stonyfield Organic Low Fat Plain Yogurt

    Step 1

    Preheat the oven to 350°.

    Step 2

    In a large mixing bowl, combine dry ingredients.

    Step 3

    Cut in butter until clumps are pea-sized.

    Step 4

    Stir in currants and yogurt.

    Step 5

    Turn the dough out onto a floured cutting board, knead 1 minute, and shape into an 8" round loaf.

    Step 6

    Slice an 'X' in the top of loaf and bake on a greased baking sheet for 35-45 minutes.
