Fluffy Pancakes

Ingredients
  • 2 cups flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • ½ cup sugar
  • ½ tsp salt
  • 1 cup Stonyfield Organic Nonfat Plain Greek
  • ¾ cup Stonyfield Organic Milk
  • 3 eggs
  • 1 tsp vanilla
  • ½ cup vegetable oil
Instructions
  1. In a large bowl, mix all dry ingredients: flour, baking powder, baking soda, sugar, and salt.
  2. In a separate bowl beat the eggs, adding yogurt, milk, vanilla, and vegetable oil.
  3. Pour the dry ingredients into the egg mixture mix until thoroughly blended.
  4. Spoon the batter onto a preheated, oiled griddle, using 1/4 cup batter for each pancake.
  5. Cook pancakes slowly over a low-medium heat for approximately 4-6 minutes, flipping midway through.
  6. Transfer to a plate and add your favorite toppings to enjoy!
