Yields: 8 servings
- 1 bunch of carrots, preferably with tops
- 3 C of your favorite veggies
- 1 16oz container Stonyfield Whole Milk Smooth & Creamy Maple flavored yogurt
- 1 whole bulb of garlic, ends chopped off, unpeeled
- a dash salt and pepper
- juice of 1 lemon
- a dash thyme
- 4 T olive oil
Preheat oven to 375 degrees.
Chop vegetables as desired
In a large bowl, mix vegetables with olive oil, and add salt, pepper and thyme until completely coated
Pour out onto a baking sheet with parchment paper.
Place the whole bulb of garlic on the pan.
Cook for 20 minutes.
Peel the roasted garlic and place in a mixing bowl.
Crush with a fork until it’s a paste consistency.
Add the container of Stonyfield Whole Milk Smooth & Creamy Maple flavored yogurt, lemon juice, and salt and pepper to taste.
Garnish the vegetables with dollops of the yogurt sauce.
