Roasted Vegetables with Maple Yogurt Sauce
Give your veggie dish a sweet kick with a drizzle of maple yogurt glaze!

Yields: 8 servings
- 1 bunch of carrots, preferably with tops
- 3 c of your favorite veggies
- 1 c Stonyfield Organic Whole Milk Smooth & Creamy Plain
- 1/4 c maple syrup
- 1 whole bulb of garlic, ends chopped off, unpeeled
- a dash salt and pepper
- juice of 1 lemon
- a dash thyme
- 4 Tbsp olive oil

Step 1
Preheat oven to 375 degrees.
Step 2
Chop vegetables as desired
Step 3
In a large bowl, mix vegetables with olive oil, and add salt, pepper and thyme until completely coated
Step 4
Pour out onto a baking sheet with parchment paper.
Step 5
Place the whole bulb of garlic on the pan.
Step 6
Cook for 20 minutes.
Yogurt Sauce:
Step 1
Peel the roasted garlic and place in a mixing bowl.
Step 2
Crush with a fork until it’s a paste consistency.
Step 3
Add the Stonyfield Whole Milk Smooth & Creamy Plain Yogurt, maple syrup, lemon juice, and salt and pepper to taste.
Step 4
Garnish the vegetables with dollops of the yogurt sauce.
