Step 1

To make the garlic yogurt sauce--In a small microwave-safe bowl, whisk together the yogurt, garlic, dill and salt. Heat yogurt in the microwave until warm, about 20 seconds. You just want to take the chill off the yogurt. Do not overcook. Set aside.

To make the garlic yogurt sauce--In a small microwave-safe bowl, whisk together the yogurt, garlic, dill and salt. Heat yogurt in the microwave until warm, about 20 seconds. You just want to take the chill off the yogurt. Do not overcook. Set aside.

Step 3

Add the butter to the same skillet and gently heat, stirring often. It will foam, sizzle, and turn a light brown color (careful it does not burn). Turn off the heat and stir in 1 tablespoon olive oil, Aleppo pepper (or paprika + crushed red pepper flakes) and paprika.

Step 4

Divide the warmed garlic yogurt sauce between four shallow bowls, top each with a fried egg, pour the chili butter around and over the yogurt and eggs, and garnish with more Aleppo pepper, paprika, chopped dill, cilantro, if using, and salt.
