The most popular breakfast quote is, “Breakfast is the most important meal of the day”. As popular as it is, skipping breakfast is something a lot of us do due to time constraints, not craving heavy breakfasts, or simply not having the energy to get up in the mornings to make something nice for yourself.
I’m here to tell you that the following three recipes each take about five minutes to make but look outstanding when you serve them either to yourself, your family, or at a breakfast get together. They’re pretty enough to serve to weekend guests, yet simple enough that you can make them on a daily basis for yourself and feel good about a bright, colorful addition to your mornings.
The Cacao, Chia, & Strawberry Parfait is layered with the Stonyfield Greek & Chia, which I adore – chia seeds are my thing! Slowly stir in the cocoa powder, layer with fresh berries, a strawberry puree, and crunchy cacao nibs and you’ll get excited to see this in the mornings!
My take on oatmeal adds Caribbean flavor – a Pina Colada Oatmeal with brighten up any rainy spring morning! Shredded coconut, fresh ripe pineapple, and a splash of coconut extract make this a little jar of sunshine!
Last but not least, an easy way to get extra protein into your morning green juices – blend them with Greek yogurt! I used BluePrint green juice to make mine, but you can definitely use homemade green juice if you have a favorite recipe.

Cacao, Chia, & Strawberry Parfait
2 – 5.3 ounce containers of Stonyfield Greek and Chia Red Berries Yogurt
1 tablespoon unsweetened cocoa powder
1 teaspoon vanilla extract
1/4 cup fresh strawberries
3 tablespoons cool water
1/4 cup chopped fresh strawberries
1 tablespoon cacao nibs
Stir the Greek yogurt with cocoa powder and vanilla extract.
Puree strawberries and water until smooth.
Layer chopped strawberries, chocolate yogurt mixture, and strawberry puree in two glass jars. Top with crunchy cacao nibs. Can be served immediately or refrigerated overnight!
Pina Colada Oatmeal
2 cups prepared oatmeal of your choice
1 – 5.3 ounce container of Stonyfield Plain Greek yogurt
1 tablespoon coconut extract
1/2 cup chopped pineapple
2 tablespoons shredded sweetened coconut
Stir together the cooled oatmeal, yogurt, and coconut extract.
Layer in two glass jars, topping with chopped pineapple and shredded coconut.
Greek Green Juice
8 ounces green juice
4 ounces Stonyfield Plain Greek yogurt
Prepare your favorite green juice or use store bought.
Blend with Greek yogurt and serve immediately.
