On game day it’s all about pulling off a seemingly impossible move that gets you the touchdown. Either that or it’s doing something so simple that the other team never saw it coming. Today, that is you with these 3 easy game day recipes.
Not Your Average Poppers
This spin off of Jalapeno Poppers is easy, seriously delicious and can be made in less than 30 minutes!
7-10 jalapeno peppers (we also used Anaheim peppers because they were bigger)
1 c. Stonyfield Plain Greek yogurt
1 c. sharp cheddar cheese (a little extra to top each pepper before baking)
½ tsp. salt
½ tsp. cumin seeds
½ tsp. cumin powder
½ c. breadcrumbs
Preheat oven to 350°.
Slice the peppers vertically; remove the insides (seeds and membrane).
Mix Greek yogurt, cheddar cheese, salt, cumin seeds, and cumin powder together and fill each pepper with mixture. Top each pepper with breadcrumbs, and more cheddar cheese.
Bake for 25 minutes, if you want the cheese to brown, broil on low afterward.
Edamame Avocado Dip
Prepare your taste buds for this blitz, for when edamame and avocado join together, you’ll be knocked down by how darn good it is, and how you never thought of doing this before!
1-12oz package of frozen shelled edamame
1 medium avocado, peeled, seeded and cut up.
¾ c. Stonyfield Plain Greek yogurt
¼ c. chopped onion
3 tbsp. lemon juice
2 tbsp. basil pesto
¾ tsp. sea salt or kosher salt
¼ tsp. freshly ground black pepper
In a food processor, combine all ingredients except for the Greek yogurt. Once blended, stir Greek yogurt into the mix and serve chilled with tortilla chips, pita chips and chopped vegetables.
5 Minute Black Bean Dip
Five minute dip? It’s no Hail Mary pass in the 4th quarter, but it is impressively delicious!
1 garlic clove, peeled
1 ¾ c. black beans rinsed and drained
½ c. Stonyfield Plain Greek yogurt
3 tbsp. Water
2 tbsp. extra virgin olive oil
1 tbsp lime juice
1 ½ tsp. cumin
¼ tsp. cayenne
smoked paprika (as a garnish)
- In a processor, pulse garlic clove until finely chopped
- Mix in all other ingredients except the Greek yogurt, and blend until smooth.
- Add in Greek yogurt and stir together, or blend for a thinner consistency.
- Garnish with paprika and lime and serve with tortilla or pita chips & veggies.
