Choiniere Family Farm
Guy and Beth Choiniere own the Choiniere Family farm, located in Highgate Vermont. The Choiniere farm is a small, family run organic dairy that has been in the family for quite some time. In fact, Guy’s father was the previous owner and still helps with tending to the cows and other chores that need to be done around the grounds. Guy and the family take pride in knowing each and every cow’s name and one of their biggest passions is soil health and how it relates to the health of the cows, their milk, and the planet.
Goat Milking
Matt is in the “Goat Milking Parlor” at Blue Top Farm. His cousin Lori is milking the goats with Blue Top's vacuum and pulsation milking system. Each goat will produce a gallon to gallon and a half of milk, which Lori will send to a cheesemaker. However, anything can be made with goat milk that can be made with cow milk.

Cheese Making
The Boucher family mills the curds by hand. Eventually the curds are scooped up, briefly drained, and placed into molds. It's beginning to look like tasty blue cheese!
