Zesty Grapefruit Quinoa
|1⁄3||c||fresh cilantro (finely chopped)|
|1⁄3||c||honey roasted peanuts|
|1⁄3||c||Stonyfield Organic Plain Greek Yogurt|
|2||tbsp||fresh grapefruit zest|
|2||chives (thinly sliced)|
|1⁄4||tsp||Freshly ground black pepper|
Cook quinoa according to package directions. Remove from heat and immediately transfer to a large bowl. Add honey and gently toss to combine. Set aside covered for 10 minutes to soak.
Mix in remaining ingredients.
