Zesty Grapefruit Quinoa

Ingredients
| 1 1⁄2 | c | Quinoa |
| 1 | tbsp | honey |
| 1⁄3 | c | fresh cilantro (finely chopped) |
| 1⁄3 | c | honey roasted peanuts |
| 1⁄3 | c | Stonyfield Organic Plain Greek Yogurt |
| 1 | grapefruit (juiced) | |
| 2 | tbsp | fresh grapefruit zest |
| 2 | chives (thinly sliced) | |
| 1⁄4 | tsp | sea salt |
| 1⁄4 | tsp | Freshly ground black pepper |
Directions
Cook quinoa according to package directions. Remove from heat and immediately transfer to a large bowl. Add honey and gently toss to combine. Set aside covered for 10 minutes to soak.
Mix in remaining ingredients.
Serve.
