Yogurt Cheese Parfait
|6||c||Stonyfield Organic Fat Free Plain Yogurt|
|1||tbsp||lemon zest (finely grated)|
|2||c||fresh berries (raspberries, blueberries or hulled and sliced strawberries)|
The day before serving or early in the day, stir the yogurt and the sugar together. Let this mixture drain for 4 to 6 hours to make yogurt cheese
Add the grated lemon zest to 2 1/2 cups of yogurt cheese and mix well. Reserve any extra yogurt cheese for another use. Spoon the yogurt cheese into 6 parfait glasses, alternating with layers of fresh berries. If the yogurt cheese is too thick, it can be thinned slightly with additional yogurt.
