Watermelon Salad

This unusual combination is surprisingly delightful and refreshing. The sweet and cool watermelon and mint are complemented with the saltiness of feta cheese, truly a palette pleaser.

Ingredients

2 vine ripe red and 2 yellow tomatoes cut into wedges
12 euro cucumber (sliced in 1/4 inch half moons)
10 basil leaves
3clovegarlic (minced)
12 red onion (sliced)
  Salt and pepper to taste
2tbsplemon juice
3tbspfresh mint (chopped)
12cStonyfield Organic Low Fat Plain Yogurt
12cfeta cheese
2cseedless watermelon (cubed)

Directions

  1. Mix together watermelon, tomatoes, cucumbers, and basil.

  2. Fold together garlic, lemon juice, yogurt and mint.

  3. Place watermelon mixture into serving dish or divided between salad plates.

  4. Drizzle the dressing over salad.

  5. Decorate with red onion, crumbled feta, salt, and pepper.

  6. Reserve a basil leaf for the top of the salad or salads.
