Quiche is a great dish to serve when the weather is warm outside. Its light taste and texture will keep you from feeling full on a hot summer day. And its a blank canvas for a variety of vegetables and herbs fresh from the garden

Ingredients

6 eggs
3/4 c Stonyfield Organic Low Fat Plain Yogurt
1/2 T basil
1/2 T thyme
1/4 t black pepper
2 T grated Parmesan cheese
1 zucchini (small, diced)
1 yellow squash (small, diced)
1 vidalia onion (small, diced)
3 roma tomatoes (diced)
1 unbaked 9-inch pie shell

Preparation:

Step 1

Preheat the oven to 375°.

Step 2

In a large bowl, combine the eggs, yogurt, herbs, black pepper and parmesan cheese.

Step 3

Beat well.

Step 4

Add the onion, squash and tomatoes and stir.

Step 5

Pour the mixture into the pie shell, and bake for 35-45 minutes or until cooked (the quiche should be firm to the touch).

Step 6

Let cool for 10 minutes before serving.

Thanks for this recipe sounds wonderful and I can't wait to try it and I have to just bake it without a crust for now as I'm not eating any flour except somekinds different from regular wheat. Until I make a good crust without wheat flour and subsitute one other to make a good crust then I will enjoy this quiche without a crust as I know loving quiche made now with yogurt will be so good tasting.. I'm so excited to try it and will come back after baking to let you know for sure how good it was even without a crust as a quiche lover I will still love it and i'm begging you will too. I had to rate it before trying it , but I wanted to give it top as I'm that sure I will love it as I recognize the ingredients and baked many quiche before and can just tell this will be good and I only gave it one below top rating since I've not actually baked it yet .
