Spinach Casserole

Ingredients

2pkgof chopped (10oz. each, frozen spinach, defrosted and drained)
1pkgof onion soup mix (1.8oz.)
1cStonyfield Organic Fat Free Plain Yogurt
13cthinly sliced water chestnuts
12cgrated Gruyere cheese
12cgrated Parmesan cheese

Directions

  1. Preheat oven to 350°.

  2. Combine spinach, yogurt, soup mix, water chestnuts and gruyere in casserole dish.

  3. Cover and bake for 30 minutes.

  4. Sprinkle with grated parmesan before serving.

  5. Serve along side Quinoa Cakes.
