Spicy Beef with a Cilantro Yogurt Purée

Tips are a great beef cut for the grill. This dish would be equally great with flank steak or tenderloin. You choose.

Ingredients

3lbsirloin tips (block cut in thick strips)
1tspgarlic minced
1tspcumin
1tspchipotle powder or chili powder
12tspkosher salt
1cStonyfield Organic Whole Milk Plain Yogurt
1ccilantro leaves washed
1tbspextra virgin olive oil
1tbsplime juice

Directions

  1. Combine all marinade ingredients in blender or food processor or using an immersion blender purée until smooth.

  2. Use half to marinate steak.

  3. Heat your grill or grill pan to a medium high heat and remove steaks from marinade.

  4. Season with kosher salt, freshly cracked black pepper and a sprinkling of the chipotle or chili powder.

  5. Using an instant read thermometer cook to desired doneness taking care to sear meat on all sides.

  6. Allow steaks to rest before slicing.

  7. Drizzle with additional sauce on plate before serving.
