This flavor packed Southwestern Pasta Salad is perfect for picnics, cookouts, and any summer get together. A hint of spice and a bunch of herbs and vegetables make it not only healthy, but delicious!

Ingredients

1/2 lb pasta
1/2 c corn kernels
1/4 c canned black beans (drained and rinsed)
3 T chopped cilantro
1 c grape tomatoes (sliced in half)
1/2 red pepper (finely chopped)
1/2 red onion (small, chopped)
1/2 jalapeno (finely sliced)
1/4 c mayonnaise
1/4 c Stonyfield Greek Plain Yogurt
1/4 t cumin
1/4 t paprika
1/4 t black pepper
1/4 t garlic salt

Preparation:

Step 1

Cook pasta as instructed, until al dente. You don't want soggy pasta for this picnic salad.

Step 2

Chill pasta under cold running water and drain.

Step 3

Toss together all the ingredients with the pasta and season with salt and pepper to taste.

Step 4

Chill for 2-3 hours and serve cool or room temperature.
