Shaved Fennel and Apple Salad

Ingredients
| 3 | fennel bulbs (cored and sliced thin) | |
| 2 | cortland apples (macintosh or granny smith, peeled, cored and sliced thin) | |
| Salt and pepper to taste | ||
| 2 | tbsp | fresh tarragon |
| 1⁄4 | c | canola oil |
| 1⁄4 | c | fresh lemon juice |
| 1 | c | Stonyfield Organic Whole Milk Plain Yogurt |
Directions
In medium sized mixing bowl combine fennel and apples.
In small bowl combine; canola oil, lemon juice, yogurt, and tarragon.
Mix well.
Fold into fennel and apple mixture.
Add salt and pepper to taste.
