Ingredients

34corzo
2tbspolive oil
2tbspchopped fresh tarragon
4tbspfresh lemon juice (juice of 2 lemons)
12tbspDijon mustard
1cStonyfield Organic Fat Free Plain Yogurt
3ccubed cooked chicken
1chalved cherry tomatoes
1canmarinated artichoke hearts (6oz, drained)
12ccoarsely chopped Kalamata olives
5 12tbspcapers (drained)

Directions

  1. Cook orzo according to package directions and let cool.

  2. In a small mixing bowl, combine olive oil, fresh tarragon, lemon juice, Dijon and yogurt.

  3. Refrigerate for 1 hour for flavors to combine.

  4. In a large bowl, combine chicken, orzo, cherry tomatoes, artichoke hearts, kalamata olives and capers.

  5. Toss with yogurt dressing.

  6. Chill and serve.
