Ingredients

1 large cucumber (peeled and coarsely grated)
1 large garlic clove (pressed)
  Sea salt and fresh ground black pepper to taste
  Sprigs of mint leaves to garnish
1 12tbspchampagne vinegar
1tbspfresh mint leaves (chopped)
1cStonyfield Organic Fat Free Plain Yogurt
1cseltzer water or club soda

Directions

  1. Place in a bowl the grated cucumber with the rest of the ingredients.

  2. Garnish with mint leaves and serve.

  3. In case you are not serving this immediately, exclude the seltzer water and refrigerate the soup.

  4. Add the seltzer water to the soup mixture just before serving.
