Ingredients

2bunchof fresh mint (coarsely chopped)
2 lemons (juiced)
1 sea salt and pepper to taste
1 roasted leg of chicken (cut itno 11/2 inch cubes)
  Garnish with fresh ground black pepper (lemon slices, and mint sprig)
3tbspextra virgin olive oil
2clarge grain couscous (found at specialty or organic stores)
1 6oz cup Stonyfield Organic Fat Free Plain Yogurt

Directions

Dressing:

  1. Whisk together the yogurt, mint, lemon juice and olive oil.

  2. Season dressing with salt and pepper to taste.

  3. Place couscous in a medium pot and pour 1-1/4 cups of boiling water.

  4. Simmer over a medium-low heat for about 5 to 6 minutes or until al-dente.

  5. Remove from heat and add chicken and yogurt dressing.

  6. Transfer to a serving platter.

  7. Serve warm or at room temperature.
