Hippie Wedge

We call this the "Hippie" wedge because it's a healthy take-off of the traditional wedge salad. Try it with dried cranberries, dried apricots or with what you have in the pantry.

Ingredients

1headiceberg lettuce
4 bananas (sliced)
8 dates (chopped)
4tbsphoney
4cStonyfield Organic Fat Free Plain Yogurt
4cnonfat cottage cheese
2croasted or raw unsalted cashews

Directions

  1. Cut head of iceberg into 8 wedges.

  2. Mix yogurt with honey and set aside.

  3. On your salad or luncheon plate, lay a wedge of iceberg.

  4. Drizzle with yogurt honey mixture.

  5. Add the follow ingredients over the top of the wedge, dividing the amount evenly between plates: cottage cheese, banana and dates.

  6. Garnish with 1/4 cup of unsalted cashews.
