Gouda and Olives Mini Skewers with Whiskey Yogurt Sauce

Ingredients

1cStonyfield Organic Low Fat Plain Yogurt
2tbspextra virgin olive oil
12tspsea salt (or to taste)
1tbspapple cider vinegar
1tbspapple cider
2tbspwhiskey
1 12tbspdried oregano
13cpitted kalamata olives (cut in half)
6ozGouda cheese (cut into 1/2 inch to 1 inch cubes)
  fresh ground pepper to taste and for garnish
  small skewers (about 4 inches long)

Directions

  1. In a bowl, place Gouda cheese cubes, olive oil, vinegar, apple cider, whiskey, salt, pepper and 1 tablespoon oregano.

  2. Mix and marinate for 2 hours.

  3. Separate cheese from marinate.

  4. Blend yogurt into marinade and adjust seasoning if needed.

  5. Pour into a small serving cup.

  6. Skewer one cheese cube with one piece of kalamata olive and place it on a serving platter.

  7. Assemble about 10 skewers.

  8. Place the remaining cheese cubes and kalamata olives on the same platter.

  9. Sprinkle 1/2 tablespoon of oregano over the cheese and olives and serve with whiskey yogurt sauce.
