Fluffy Mashed Potatoes

Ingredients

5lbred potatoes (small to medium size, peeled and quartered)
2tbspkosher salt
1ccooked potato water
1cStonyfield Organic Fat Free Plain Yogurt
2tbspsweet butter

Directions

  1. In a large pot, fill with water to cover peeled potatoes.

  2. Add kosher salt to water and place pot over medium-high heat.

  3. Boil until potatoes are soft.

  4. Strain the potatoes and save about 1cup of potato water.

  5. Transfer the strained potatoes into a large bowl and start mashing with a hand potato masher.

  6. Add butter and yogurt.

  7. Continue mashing to blend the ingredients and start adding little by little the cooked potato water until potatoes have reached a very fluffy and airy consistency.
