Fireworks Slaw with Tangy Cilantro Yogurt

The flavor of this slaw is as good as its looks. Bright and colorful, this would be a great accompaniment to roasted or grilled chicken or any grilled dish with a little spice to it!

Ingredients

2cfinely shredded green cabbage
1cfinely shredded red cabbage
34cshredded or julienne carrots
34cjulienne red or multi colored sweet peppers
12bunchcilantro (leaves washed and coarsely chopped)
12ccider vinegar
2tbspsugar
34cStonyfield Organic Whole Milk Plain Yogurt
1tspDijon mustard
12tspcelery seed
1tbspcanola oil
12tspkosher salt
18tspblack pepper

Directions

  1. Combine cider vinegar and sugar in a small sauce pan and bring to a boil.

  2. Reduce to 1/4 cup.

  3. Whisk together yogurt, Dijon, celery seed, oil, salt and pepper.

  4. Whisk in vinegar reduction.

  5. Toss together cabbages, veggies and herbs.
