Crunchy Turkey Salad On Greens

Ingredients

2cturkey meat (cubed)
  Salt to taste
14tspground black pepper
2tbspextra virgin olive oil (or substitute)
2tbspcapers (chopped with some juice)
13ccelery (diced)
13cred onion (diced)
1tbspfresh lemon juice
1 small gala apple (peeled and diced)
12cdried cranberries (chopped)
Topping
  parsley (finely chopped)
14 to 1/3 cup pine nuts (toasted, or substitute)
1ozcup Stonyfield Organic Fat Free Plain Yogurt
4cmixed field greens

Directions

  1. Mix all ingredients gently in a large bowl except the yogurt.

  2. Start mixing the yogurt to the turkey mixture one tablespoon at a time and mixing at each addition until desired quantity.

  3. To give a French taste to the salad, add 1 teaspoon Djion Mustard to the yogurt before adding to the turkey mixture.

  4. Serve on a bed of mixed field greens and enjoy.
