Crêpes with Fresh Fruit

Although crêpes can be complicated to make at home, you can now purchase a variety of crepe makers at your local kitchen supply store to make the task simple. Filled with fresh fruit, a sweet crêpe makes an excellent breakfast or dessert.

Ingredients

Filling
2cStonyfield Organic Low Fat Vanilla Yogurt
14tspground cinnamon
14tspground nutmeg
Crêpes
1call-purpose flour
14cconfectioners' sugar
2 eggs
1cStonyfield Organic Whole Milk
3tbspbutter (melted)
1tspvanilla extract
14tspsalt

Directions

Filling:

  1. Mix yogurt and spices. Chill and reserve.

Crêpes

  1. Sift flour and powdered sugar into a mixing bowl. Add eggs, milk, butter, vanilla, and salt. Beat until smooth.

  2. Add 3 tablespoons of batter to a lightly greased 6-inch skillet.

  3. Tilt skillet so that batter spreads to almost cover the bottom of skillet.

  4. Cook over medium heat until lightly browned, then turn and brown the other side.

  5. Repeat process with remaining batter, oiling skillet as needed.

  6. Place finished crêpes aside, until ready to assemble.

  7. Fill crêpe with a combination of fresh fruit and yogurt, then roll.

  8. Top with yogurt and fresh fruit.
