Chocolate Icebox Pie

This simple recipe is great for anyone that likes to entertain but does not have the time to bake up something for dessert.

Ingredients

1cStonyfield Organic Fat Free Plain Yogurt
8ozfat free cream cheese
3tbspsugar
1tspvanilla extract
6ozsemisweet chocolate
1 low fat graham cracker pie crust (9-inch prepared)
  whipped cream (for garnish)

Directions

  1. Chop semi-sweet chocolate squares in small pieces.

  2. Using a double boiler, melt chocolate, until all lumps have disappeared.

  3. Reserve.

  4. In a medium-size mixing bowl, cream together cream cheese and sugar.

  5. Blend yogurt and vanilla extract into this mixture.

  6. Fold in melted chocolate, mix well, and pour filling into graham cracker crust.

  7. Freeze for 2-3 hours or until set.

  8. Top with whipped cream.

  9. Allow pie to warm slightly before serving.
