Ingredients

2lbcauliflower
1cStonyfield Organic Low Fat Plain Yogurt (warm)
2tbspbutter (or substitute with olive oil)
  Salt and pepper to taste

Directions

  1. Place cauliflower florets in a steamer and cook until florets are very tender about 10 to 15 minutes.

  2. Place cauliflower in a food processor and process until almost smooth.

  3. Add yogurt to a sauce pan and gradually warm over low heat, carefully to avoid curdling.

  4. Add butter, salt, pepper, and yogurt to cauliflower a little at a time until reaching desired consistency.

  5. Garnish with parsley.
