Cauliflower Purée

Ingredients
| 2 | lb | cauliflower |
| 1 | c | Stonyfield Organic Low Fat Plain Yogurt (warm) |
| 2 | tbsp | butter (or substitute with olive oil) |
| Salt and pepper to taste |
Directions
Place cauliflower florets in a steamer and cook until florets are very tender about 10 to 15 minutes.
Place cauliflower in a food processor and process until almost smooth.
Add yogurt to a sauce pan and gradually warm over low heat, carefully to avoid curdling.
Add butter, salt, pepper, and yogurt to cauliflower a little at a time until reaching desired consistency.
Garnish with parsley.
