Blueberry Waffles

You can either make these crispy golden waffles with the blueberries in the batter or as garnish along with whipped cream. Yum!

Ingredients

2call-purpose flour
1tspsalt
4tspbaking powder
2tbspsugar
2 eggs (room temperature)
1 12cStonyfield Organic Low Fat Plain Yogurt
1cblueberries
1tbspbutter (melted)

Directions

  1. Put the flour, salt, baking powder and sugar in a mixing bowl and stir with a fork until blended.

  2. In another bowl, beat the eggs and then stir in the yogurt.

  3. Combine with the flour mixture until mixed.

  4. Add the melted butter and blueberries and stir until mixed.

  5. Pour about 1/2 cup of batter into a very hot waffle iron.

  6. Cook waffles until they are golden and crisp (about 3–5 minutes).

  7. Serve immediately.

Not crispy, but yummy nonetheless

Although our blueberry waffles did not turn out crispy, they were soft and slightly gummy. For our family, that works - since we do not like our waffles to be too crispy. On the other hand, I love that I can get my picky toddler to eat yogurt and blueberries this way! I pureed the blueberries and added them to the yogurt. To add more flavor, I also sprinkled a bit of nutmeg and almost a teaspoon of cinnamon. In place of sugar, I used honey. So, my changes could also have contributed to the softer texture. I could see using another type of yogurt, such as the BaNilla or French Vanilla, to be just as good as the plain yogurt. This would incorporate a complexity of other flavors that might please your palate. So, if you haven't tried this unique twist on the waffle, do so! You'll appreciate it as our family does, too.
