Berry Filled Crêpes with a Yogurt Laced Caramel Sauce

Ingredients

| 4 | eggs | |
| 1 | c | flour |
| 1⁄2 | c | Stonyfield Organic Whole Milk |
| 1⁄2 | c | water |
| 2 | tbsp | sugar |
| 1 | tsp | vanilla |
| 2 | tbsp | melted butter |
| Yogurt Laced Caramel Sauce | ||
| 1 | c | sugar |
| 1⁄3 | c | hot water |
| 1⁄4 | c | Stonyfield Organic Heavy Whipping Cream |
| 1⁄2 | c | Stonyfield Organic Whole Milk Plain or Vanilla Yogurt |
| 1 | pinch | salt |
| 1 | q | mixed berries (for garnish) |
Directions
For crêpes combine all ingredients in mixing bowl and whisk smooth.
Cover and allow to stand at least 1 hour before cooking crêpes over medium heat as thin as possible.
(If you like, try sweet chocolate crêpes by adding 2 tablespoons chocolate syrup).
Batter makes 12 crêpes.
For the sauce, combine sugar and water in heavy saucepan and stir to dissolve over medium heat.
Allow to caramelize for 15-20 minutes.
Turn off slowly and carefully add heavy cream and whisk smooth.
Whisk in yogurt and salt.
To serve, spread crêpes on work surface.
Divide berries down center of each crêpe and roll crêpes tightly around berries.
Serve each person 2 crêpes drizzled generously with sauce.
