It doesn't get much simpler than putting all ingredients in a bowl and enjoying.
- 1 c Stonyfield Organic Greek Plain Yogurt
- 1-2 raw beets (shredded)
- 1 fresh orange (cut into segments)
- 1 t fresh dill
- sea salt (optional)
Place all ingredients in a bowl and enjoy!
Use pre-cooked or canned beets in place of raw beets if you prefer a softer texture or are short on time. Canned beets should only contain beets, water and (sometimes) salt.
• Marinate the shredded beets in a little orange juice and olive oil before serving with the yogurt.
• Add shredded fennel along with, or in place of, the beets.
