Asparagus with Dijon Sauce

A rich and velvety sauce; serve over roasted or grilled asparagus or as a salad dressing.

Ingredients

1clovegarlic (finely chopped)
  Salt and pepper to taste
12tspsalt
1tspsugar
3tbspDijon mustard
3tbspfresh lemon juice
1tbspcapers (drained)
2tbspolive oil
12cStonyfield Organic Low Fat Plain Yogurt
2lbasparagus (tough ends removed)

Directions

  1. Combine yogurt, dijon mustard, salt, lemon juice, sugar, and garlic in a bowl and beat well.

  2. Fold in the caper.

  3. Place asparagus in a large glass baking dish.

  4. Toss asparagus with olive oil and salt and pepper to taste.

  5. Bake 15-20 mintues depending on the thickness of the stalk.

  6. Remove from oven and toss asparagus with djion sauce.

  7. Serve room temperature.
