Asparagus and Tomato Salad

Ingredients

2 tomatoes (chopped)
4tbspStonyfield Organic Low Fat Plain Yogurt
1tbspDijon mustard
1tbspgrated Parmesan cheese
1lbasparagus (tough ends trimmed)

Directions

  1. Steam asparagus for 5-7 minutes and transfer to an ice bath.

  2. Once cooled, cut asparagus into third.

  3. In a seperate, medium size bowl, mix together yogurt, mustard and cheese.

  4. Add asparagus and tomatoes and toss.

  5. Serve cold as a side dish.
