| 5 | lb | red potatoes (small to medium size, peeled and quartered) |
| 2 | tbsp | kosher salt |
| 1 | c | cooked potato water |
| 1 | c | Stonyfield Organic Fat Free Plain Yogurt |
| 2 | tbsp | sweet butter |
Try this light as a feather recipe for mashed potatoes. It is heavenly.
| 5 | lb | red potatoes (small to medium size, peeled and quartered) |
| 2 | tbsp | kosher salt |
| 1 | c | cooked potato water |
| 1 | c | Stonyfield Organic Fat Free Plain Yogurt |
| 2 | tbsp | sweet butter |
In a large pot, fill with water to cover peeled potatoes.
Add kosher salt to water and place pot over medium-high heat.
Boil until potatoes are soft.
Strain the potatoes and save about 1cup of potato water.
Transfer the strained potatoes into a large bowl and start mashing with a hand potato masher.
Add butter and yogurt.
Continue mashing to blend the ingredients and start adding little by little the cooked potato water until potatoes have reached a very fluffy and airy consistency.
