Ingredients

1 1/2 c King Arthur Organic White Whole Wheat flour
1 c oats (old fashioned or quick cooking)
3/4 c sugar
1/2 c wheat germ (toasted)
2 t baking powder
1 t cinnamon
1/2 t baking soda
1/2 t salt
1 1/2 c Stonyfield Organic Plain Lowfat Yogurt
1/3 c vegetable oil
2 Organic Valley large eggs
2 t King Arthur vanilla
1 c Earthbound Farm organic blueberries (fresh or frozen)

Preparation:

Step 1

Pre-heat oven to 350° and grease a 9€" x 5"€ loaf pan with non-stick spray or butter.

Step 2

In a medium bowl, whisk together dry ingredients: whole wheat flour, oats, sugar, wheat germ, baking powder, cinnamon, baking soda and salt.

Step 3

Using an electric stand mixer, beat together yogurt, oil, eggs, vanilla and beat over medium speed. Slowly add dry ingredients until just combined then remove from mixer and rest batter for 10 minutes to allow the bran to hydrate.

Step 4

Carefully fold in the blueberries then pour batter into the bread pan. Bake for 50-60 minutes or until toothpick comes out clean. Let cool completely before serving or wrapping as a gift.

This bread came out really well, hearty but not overly dense. I substituted out coconut oil for the vegetable oil and used regular yogurt vs the low-fat. Wish I had fresh blueberries instead of frozen, another time!

This looks delicious! How can I modify this recipe so that it does not contain eggs? Milk products are okay for me but eggs are not. I have a SEVERE egg allergy but I love baked goods. I'd like to learn how to bake at home on my own instead of buying vegan goods elsewhere just to avoid the eggs. I've heard that applesauce and/or bananas are good substitutes, some have suggested silkened tofu. But I am unsure of the ratio. Any advice from a skilled baker would be appreciated. Thank you!

My son has an egg allergy and I bake all his foods at home. One egg = 1/4 cup = 4T Some suitable egg substitutions include: 3T warm water with 1T flax seed meal (let sit a few minutes), 1/4 cup applesauce, 1/4 cup silken tofu, 1/4 cup mashed banana, or Energy (spelling?) Egg replacer. The flax seed/water is my favorite and I use it in most of my baking.

You can use chia seeds as an egg replacer. I've tried it and it works well. I have used 1 tablespoon chia seeds soaked in 3 tablespoons water but if you google chia seed egg replacer you will find other chia seed/water proportions too. Chia seeds have many health benefits as well!

This bread was so good! My 2 year old gobbles it up every time I give it to him! I didn't have wheat germ on hand so I used flax seed. I also used the Oikos yogurt since that is what I had as well. I don't know if the flax seed did anything different, but the bread we had was wonderful. Can't wait to make this in the summer with fresh blueberries instead of the frozen.

My daughter also has an egg allergy -- we replace the eggs in every recipe we bake with 1/4 cup applesauce per egg. We used applesauce for the eggs in this recipe, and it turned out great! Yummy!!

I loved this! I didn't have blueberries, but had blackberries so I added those! I substituted the oil for all coconut oil. Worked out great! The bread is hearty and the yogurt makes it SOOO Moist! Definitely will keep this recipe and make it again.

This recipe came out too dry! Next time I would reduce the oats and wheat germ and add more blue berrys, one cup is not enough.
