Ingredients

2 T olive oil
1 onion (chopped)
2 t cumin
2 clv garlic (minced)
1 t salt
1/4 t black pepper
2 lb sweet potatoes (peeled and cut into 1-inch pieces)
1 chipotle chile in adobo sauce (minced)
7 c low-sodium chicken broth

Preparation:

Step 1

Heat oil in a medium-size skillet over medium-high heat. Add onion, cumin, garlic, salt and pepper and cook for 7 minutes, stirring occasionally. Scrape contents of skillet into slow cooker bowl and add potatoes, chipotle chile, and broth. Cover and cook on high for 4 hours, or low for 6 hours, or until potatoes are tender.

Step 2

Working in batches, carefully transfer soup to a blender and puree until smooth. Add yogurt to blender and puree until well blended. Serve immediately.

This whipped up really easily! Four hours later we had a delicious soup with plenty for leftovers. To make it even easier, I skipped the chipotle and just added 1 1/2 tsp chili powder instead. I also used an immersion blender (highly recommended). When eating some leftovers the next day I added some butter, and that seemed to give an extra boost to the heat. So if you want to make a mild batch (for example, if someone who will eat this has a sensitive stomach), do what I did above. To make individual portions spicier, add some butter.

I thought this would be a thicker soup. Less chicken stock might help. Also, I didn't think it had a lot of sweet potato flavor.

We were too impatient to use a slow cooker, so I just cooked it on the stove. We added my husband's homemade dried chipolte and so it had a good kick. It reheated well the next day. It was a little thin, but it had plenty of taste for us.

I added turmeric and chopped celery, orange and yellow peppers... provided extra spice at the table for those who desired.. Delicious - Maybe add tofu or tempeh to boost protein next time?
