I had to re-make the pie and make some tweeks. I whipped the heavy cream with the sugar instead of folding it in. I did not like the frozen thawed fruit in it at all. I used fresh and I did not use two cups of it. Maybe I should have drained the frozen fruit but the recipe did not say to do so. The two tablespoons of lemon zest was a bit much for me.

We LOVED this pie! We did frozen/thawed peaches the first time and frozen/thawed strawberries the second time. It was SO GOOD! We let it set in the refrigerator for almost 24 hours the first time and it was not enough time. The 2nd time we let it set for about a day and a half and it was PERFECT! We also did a homemade graham cracker crust. This pie was a hit with our family! Perfect for those hot summer days! :-)
