Ingredients

3/4 c crumbled goat cheese
1/2 c Stonyfield Organic Fat Free Plain Yogurt
2 T olive oil
2 t honey
1 t salt
1/4 t black pepper
1 onion (finely chopped)
1 small red pepper (seeded and finely chopped)
4 links sweet Italian sausage (casings removed)
1 c lentils (rinsed and picked over)
4 c arugula (roughly chopped)

Preparation:

Step 1

Stir together goat cheese, yogurt, 1 tablespoon of the olive oil, honey, salt and pepper; set aside.

Step 2

Heat remaining 1 tablespoon olive oil in a medium-size skillet over medium heat. Cook onion and pepper for 4 minutes. Crumble sausage into pan and cook, stirring often, for 6 minutes or until no longer pink; remove from heat and set aside.

Step 3

Place lentils in a medium-size saucepan and cover with 2 inches of water. Bring to a boil over high heat, then reduce heat to medium-low and simmer for about 25 minutes or until tender.

Step 4

Drain and transfer to a serving bowl. Stir in prepared dressing, sausage mixture and arugula; serve immediately.

Hi! I am proud to say we had the Warm Goat Cheese and Arugula Lentil salad for dinner. I am pleased to say it was a hit all the way around the table (2 adults and 2 kids). I really liked the flavors, especially when added to the arugula. I will definitely make this again, though I think I might change it up a bit (perhaps make a bit more of the yogurt/cheese mix). I didn't use Italian sausage, as I didn't have it on hand. Instead, I used a basic breakfast sausage, purchased from our local farmer. I also used an herb and garlic seasoned goat cheese (to make up for no Italian sausage). I did notice, however, that though the recipe called for red pepper it was not included in the recipe. OOPS! I am happy to say it doesn't matter, it was great without anyway. :) I am glad I made no sides as this salad was very filling, and quite satisfying. Thanks for a great recipe! Sincerely, ~Connie
