Stonyfield friend and fan, Renata, has loaned us her Vanilla Cake recipe, so we thought we’d pass it along for you to try. Do you bake with yogurt? If so, share your favorite recipe with us in the Comments section. We may feature your recipe in a future blog!
Renata’s Vanilla Cake
Ingredients
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup plain nonfat Oikos Stonyfield Yogurt
1 cup cane sugar
3 large eggs
1/3 cup applesauce
1/2 teaspoon pure almond extract
1/2 teaspoon pure vanilla extract
Fresh or frozen organic berries to serve
Preheat oven to 350°F. Oil a 9-inch cake pan.
In a mixing bowl, blend flour, baking powder, baking soda and salt. In a second bowl, whisk together yogurt, sugar, eggs, applesauce, almond extract and vanilla extract. Gently whisk flour mixture into yogurt mixture just until blended.
Pour batter into prepared pan and bake for 45 minutes or until cake is golden brown. The cake should be just firm in the center when done. Cool cake on a rack and serve with berries. The fruit takes the place of icing and provides an extra healthy touch of sweetness from nature!
