Ever finish brushing your teeth, just about to head out the door in the morning and think, “Oh no, I forgot to make a lunch!” This is me. Just about every morning. Thankfully, Manchester, New Hampshire has plenty of places to grab lunch on the go. Some days (every day), I look in envy at a fellow co-worker’s homemade mac and cheese or endive salad and become disappointed in myself for my lack of motivation in lunch packing. No more, I say – and that goes for you too, reader, for this week we create masterpiece lunch fare.
An idea that really intrigued me was a mason jar salad, mostly because you can put anything in them to shake it up and voila! And you can make a few in advance on Sunday night and be ready for lunch every day.
Mediterranean Salad Jar: Penne pasta, plum tomatoes, feta, black olives, red onion, spinach and cucumbers. Make a tzatziki sauce to put on top with ½ cup Stonyfield Plain Greek yogurt, 1 clove garlic minced, 1/4 tsp dried mint (or dill)and 2 tbsp. water (for consistency).
Quinoa Kale Salad Jar: Kale, quinoa, red & black beans, chickpeas, cucumbers, red peppers, red onions, red wine vinegar and extra virgin olive oil.
Berry Snack Jar: Strawberries, blueberries, blackberries, grapes and nut of choice (optional). To make it a little sweeter add a dressing on bottom (Lime Juice with a little mint did the trick for me). The addition of Stonyfield Plain Greek yogurt isn’t just a suggestion – it’s the perfect partner to this berry delight.
Southwestern Salad Jar: Your favorite salsa on bottom, chopped avocado, corn, black beans, chopped cilantro leaves, red onion, chopped yellow, orange and red peppers, black beans, brown rice, grilled chicken (optional) and a top layer of chopped romaine lettuce.
Pro tip: When involving dressing in a salad jar you should always put it on bottom and then layer the vegetables first with grains and lettuce on the very top so it won’t get soggy.
Being prepared is half the battle of starting your week off right and with these easy ideas how could you possibly fail? Be the person being envied at work for your delicious creation while others pick up another slice of cheese pizza. You deserve it.
