When I was little my mom would make “Spice Cake”. Spice cake was delicious, sweet and finished with a hint of cinnamon. It wasn’t until age 13 that I tried Zucchini bread and realized it tasted the same as Spice Cake. With this discovery I actually applauded my mother for her sneakiness, while my brothers groaned in anger over her mischievous pseudonym for Zucchini bread.
Make veggies cool right now. Tell your kids that they are going to help you make the most delicious recipe that’s full of fun and nutrition…maybe just say it will be fun. Zucchini fritters are an easy snack kids can help to whip up, and you can use their favorite type of dipping sauce too! What you and your handy chef will need:
3 cups shredded zucchini (2-3 zucchinis)
1 tbsp. olive oil
¾ cup feta cheese (crumbled)
1 Tsp. salt
2 large eggs
2/3 cup whole-wheat flour
4 scallions (the whole scallion) chopped
- Using a colander, mix zucchini and salt and drain the zucchini by pressing down into the colander.
- Mix zucchini, eggs, flour, cheese and scallions in a bowl.
- Heat skillet on stove and add olive oil when ready
- Using a spoon, make 2-inch round circles on the skillet with the zucchini mix.
- Cook until golden (about 5 minutes) on each side.
Once the cakes are ready to eat, you can use whatever dipping sauce you fancy most. Plain yogurt is the easiest dipping sauce, but you could add a little Simply Organic Ranch Dip Mix for a kick too!
