Holiday Side Dish of Your Dreams: Sweet Potato Casserole

There are only two roles to be played during the holidays: you are either a host or a guest. Either way you have to be prepared with a dynamite dinner or side dish for the get together – something that everyone will remember and even email you for the recipe days later. Be a super holiday hero, make this side dish. This sweet potato casserole is the perfect combination of sweet potatoes, yogurt and cheese to melt your way into everyone’s heart.

So, whether you’re cooking for 20 or assisting with just a side dish, this simple to make casserole will be the first empty dish in the sink.

Ingredients

Preheat oven to 350 degrees

4 sweet potatoes, peeled and sliced thinly

1 ½ cups Stonyfield Low Fat Plain Smooth and Creamy Yogurt

½ cup of Stonyfield Reduced Fat 2% Milk

2 tablespoons butter cut into cubes

4 tablespoons grated parmesan cheese

Salt and pepper to taste

Directions

Grease casserole dish with cooking spray.

Place slices of sweet potatoes on bottom of casserole dish and top with butter.

Place the yogurt evenly over the sweet potatoes, pour ½ milk over yogurt and garnish with pepper.

Top everything with the parmesan cheese.

Bake for 40 minutes, with aluminum foil covering. After 40 minutes remove aluminum foil and return to oven for another 10 minutes until the sweet potatoes are soft.
