Easy Mix-and-Match Soup

Nothing works to chase the winter blues away quite like a steaming bowl of hot soup. We love this fun soup recipe because it's so easy and versatile. Start with whatever you have in your cabinet and mix and match your way to soupy bliss. You'll never end up with the same soup twice, and each variation is delicious enough to make you forget about the mountain of snow lurking outside your door.

Easy Mix-and-Match Soup

1 cup Stonyfield Greek plain yogurt
3 cups vegetable or chicken stock

Choose 1:
2 ½ cups broccoli puree
2 ½ cups butternut squash puree
2 ½ cups carrot puree
2 ½ cups potato puree
2 ½ cups baby spinach puree

Choose 1:
2 tbsp. minced chives
3 tsp. chopped fresh basil
2 tsp. coriander
¾ tsp. nutmeg
2 tsp. dried thyme

Choose 1:
2 tbsp. grated parmesan
2 tbsp. extra virgin olive oil
2 tbsp. olive tapenade
1 tbsp. of horseradish
¼ cup ground almonds

Choose 1:
1 tbsp. sherry vinegar
1 tbsp. white balsamic vinegar
2 tbsp. white wine
¼ cup chopped tomatoes
1 tbsp. rice vinegar

Whisk the Stonyfield Greek plain yogurt and chicken or vegetable stock together with 1 item of your choice from each list until well blended. Cook over medium heat for 5 minutes or until warmed through; serve immediately and enjoy.
