If the e-blasts, ads, magazine covers, and morning talk shows haven’t enlightened you already, I’m going to let you in on a secret. The It Girl of 2012 New Year’s Resolutions is . . . weight loss! Sneakier versions of this timeless ambition can be found within other favorite Resolutions; “fewer carbs”, “less soda”, “I’m only eating canned tuna this week. Next week, beets”, and the old standby “this year, I’m just gonna eat less”. We all want to be healthier, fitter versions of ourselves. As we should.
But how about this one for a New Year’s Resolution? I say, EAT MORE. Hip-hooray! You love me already.
While I recognize there are as many approaches to healthy eating as varieties of Peruvian Potato, my theory in this (probably not) revolutionary idea is this: if you are eating MORE of the good stuff, you are eating LESS of the bad stuff. ***Heavenly Seraphim Singing***
Basically, good food is awesome. You really should eat it.
So, think of the next 365 days as that classic and beloved metaphor: the cornucopia. Brim it over with foods you’re proud of creating and eating. Fill it with whole foods and even some ingredients you have to Google. In other words, experiment. Have some fun. Go to the Farmers’ Market. Show off your skills and ever-growing food knowledge. Get crazy in that kitchen! Aaaand, Eat More Kale! The more you over-stuff that 365 Day Cornucopia with organic goodness and love, the less room there is for the yucky stuff.
And know that you’re not alone. We downright awesome folks here at Stonyfield are always challenging ourselves to find ways to eat MORE good food. Here’s a few super-hip Eat More resolutions from HQ:
Liza D.- 2012 is the year I begin to Eat More things I grow myself. Even if I grew one tomato I’d be successful, since I’ve never grown anything before. I’m aiming for a kitchen garden, but I’d consider a small container garden (heck, an herb garden!) a success, too. Baby steps.
Colin V.- I aim to finish all the food in my organic farm share box every week this summer! (author’s note: that’s a whole lotta Farm Share, Colin. God speed.)
Kristina D.- Well, I am currently obsessed with kale. Specifically the Tuscan kale variety. Since I already eat enough of that, I’d like to up my intake of Farrow. I’ve played around with a few recipes this fall, but would like to eat a bit more – it’s packed with protein (even more than Quinoa) and has a robust nutty flavor that’s delicious with all kinds of sauces and vegetables – or great by itself as well.
Ola L. – I plan to cook more really delicious, healthy vegetarian meals and start a Meatless Mondays tradition in my house.

Eat More–Know What You Eat!
Eat more as a family.
When we sit down with the kids it’s always a better meal!
Mine would say, “I eat real food.”
My tee would say “Buy local, eat more kale!”
I grew my own produce on the patio and bought local produce from a farmstand a few blocks away.
I experimented with cooking veggies…kale included…and overall had some awesome new cooking experiences this year.
