Jesse has a hard time following any recipe, even family ones, without a little "tweaking" to make it her own and so has chosen to heartily follow two points of Julia Child's ever brilliant words of wisdom: 1. Once you have mastered a technique, you barely ever have to use a recipe again; and 2. always start out with a larger pot than what you think you need.
